Cabistros Palace was founded in January 2019 by entrepreneur and community leader Latesha Clark, in loving memory of her late mother, Charlotte Carodine.
Charlotte was known for her warmth, generosity, and unstoppable work ethic. She worked tirelessly to provide for her family and never turned away a neighbor in need — whether that meant helping pay a bill or cooking a hearty meal for anyone who walked through her door. That spirit of love, service, and good food became the foundation of Cabistros Palace.
Our Legacy
What began as a dream to honor a mother’s legacy has grown into much more than a restaurant. Today, Cabistros Palace is a community hub — a place where families gather, friendships form, and everyone feels at home.
From free senior lunches and bingo nights to teacher appreciation dinners, graduation celebrations, holiday events, back-to-school drives, summer cookouts, and local scholarships — giving back is part of who we are. We don’t just serve meals. We serve purpose.

Her philosophy is simple: serve with love, lead with purpose, and give back whenever you can. With the help of her family, Latesha has built Cabistros Palace into more than a restaurant — it’s a place where great food, bold flavors, and meaningful connections come together. Cabistro's is a wonderful little gem in our small town of Houston! Inviting atmosphere, friendly, smiling faces, and great food!! Be sure and try the Cabistro burger and loaded fries, you won't be disappointed!! We've eaten here often and definitely plan on continuing.
